Love this vegan recipe so MaChii. It is so easy to make too, using only a few simple, antioxidant rich and all-natural ingredients.

Ingredients

• 1 cup coconut milk
• 2 tsp maple syrup
• 1 ½ tsp culinary matcha
• ¼ cup chia seeds
• Pinch of salt

MaChii’s Favourite Toppings

• Coconut flakes
• Blueberries
• Strawberries
• Pistachio
• Banana
• Cocoa Nibs

Instructions

1. In a bowl add the coconut milk, maple syrup, matcha and chia seeds.

2. Mix vigorously until ingredients are well combined

3. Add toppings of choice

4. Cover the bowl & refrigerate for 6-8 hours. (I like to leave it overnight*)

*In the morning, the chia seeds will have absorbed the mix and will have thickened into a pudding that’s ready to eat.
